Cooking with Ben

Oyster, Scallop, Quail Egg Yolk, Togarashi Rimmed Caesar Shooter

I’m sure many of you have come across the delicious Instagram account cookingwithben_ of Chef Benedict Lim. Ben has over 16 years of culinary experience and even owns Ohana Poké Bar at the night market. In the evenings and weekends, he also offers catering at his home. You can let him know what ingredients you want or dislike and his menu will change depending on what is fresh.

Our first item was the Caesar Shooter which featured oysters, scallops from Japan, a quail egg yolk, some horseradish on top of a shooter of clamato juice, soy vinaigrette and rimmed with togarashi, a Japanese six spice. Usually, this shooter comes with sea urchin, but unfortunately, he could not find any fresh sea urchin that day. The togarashi gave it that spicy kick, and the scallop and oyster was so fresh. Perfect combo!

Oysters with Lime and Cucumber

Next up was another refreshing dish featuring the fresh sweet oysters. Underneath the thinly sliced cucumbers were the oysters and these were flavoured with lime and a soy vinaigrette. Definitely opens up your palette.

1.jpg by SophiaHo on 500px.com

Salmon Poké

Ben is famous for his Poké (I mean he did open a stall selling poké at the night market!). Our next dish was the Salmon Poké which was topped with Alaska shrimp sashimi and a quail egg in the centre. The salmon sashimi is flavoured with gochujang and soy vinaigrette and sits on top of sushi rice. It is similar to a sushi or chirashi tower which many restaurants have now. Probably one of my favourite pokés even though it may not be very traditional. The shrimp was so sweet and the quail egg yolk added to the creaminess. He also makes other versions, such as scallop and sometimes they are topped with sea urchin.

6.jpg by SophiaHo on 500px.com

Scallop and Prawn Uni Rissotto

One of our mains were the Scallop and Prawn Uni Rissotto. This was an amazing twist to the classic rissotto. The rissotto is made with a sake dashi broth and uni butter cream cheese with black truffle. So fragrant and flavourful! The scallops and Argentinian red prawns were also huge and cooked perfectly. Break open the 63 degree egg and let the yolk pour out, you cannot ask for a more creamy and smooth texture.

2.jpg by SophiaHo on 500px.com

Sous Vide NY Striploin

As if we were not already filled up, our last main was the Sous Vide New York Striploin. Sous vide was a smart move since he was able to set up the machine at the beginning of the dinner and let the meat slowly cook while he made the other dishes. He then needed to just sear the outside before serving to us. Very tender and pink all throughout. The meat came with sides of edamame puree, smoked pork jowl, king oyster mushrooms, and roasted parsnip. I especially loved the pork jowl as it had an amazing bouncy texture. Everything just worked so well together.

3.jpg by SophiaHo on 500px.com

Amaretto Vanilla Cake

Lastly, for dessert, we had the Amaretto Vanilla Cake which came with a coconut and pandan gelato, topped with a strawberry salsa and a piece of mint. The pandan and coconut gelato was spot on!

Overall, we really enjoyed our dinner at Ben’s. There are around 5-6 course sharing plates but you will be beyond full at the end. A minimum of 6 guests are required and his space can fit up to around 8 guests. Each dish seen above other than the starters and the dessert is shared between two people, so plenty to go around. Our dinner was $50 as we did it on a weekend, but you can get a premium menu for $75 which may offer more premium ingredients and possibly a couple more courses. Highly recommend checking this out. Just contact him on his Instagram or on his website!

Le Tea

1.jpg by SophiaHo on 500px.com

Le Tea opened up last year at Continental Plaza in Richmond and was probably one of the first to bring over the new “cheese lattea” hype that’s been popping up everywhere now. They have an extensive menu of beverages to choose from, but their tea based drinks are what they are noted for as they use fresh tea leaves in their drinks.

4.jpg by SophiaHo on 500px.com

Peach Oolong Cheese Lattea

I got the Peach Oolong Cheese Lattea which you can choose hot or cold and I chose the latter. You can also choose between salty or sweet for the cheese. Yes, it may sound weird to have cheese on your drink, but it was actually really good! The waitress told me salty is more popular, so I went with it. Essentially, the top white foam is the cheese flavour and you should drink it at a 45 degree angle to get both the foam and tea. It sort of tastes like cream cheese at the top and the sweet tea surprisingly goes well with it. I did wish that the tea was more strong and after Happy Lemon opened up, I have to say they do a better job at this drink.

3.jpg by SophiaHo on 500px.com

Oreo Smoothie

Of course S chose something off the “popular” charts. Instead of the teas, S chose the Oreo Smoothie which was topped with an Oreo cookie. The smoothie was not too sweet but I thought it was a bit too icy.

2.jpg by SophiaHo on 500px.com

Overall Le Tea has some decent drinks but with so many new Taiwanese bubble tea chains opening, it’s hard to compete. Their prices are comparable to the others at around $4 – $5 a drink, but I would probably go back to Happy Lemon or Chatime instead. Service was also not very friendly, but I do like the brick wall decor inside.

Pros:
– Large selection of tea-based drinks
– Decor is nice and nice spot to enjoy your drink

Cons:
– Tea flavour is not strong enough

Price Range: $5-6

Big G Large Fried Chicken

n by SophiaHo on 500px.com

Ever since we came back from Taiwan, we’ve been craving the large fried chicken you can get at the Taiwanese night markets. The first time we came across it in Vancouver was at the Richmond Night Market, and now Big G Large Fried Chicken has opened up a store front in the mall on Capstan.

n by SophiaHo on 500px.com

Take out is available, but there is also a decent amount of seats for you to dine inside.

n by SophiaHo on 500px.com

Whether you order take out or dine in, you will need to first order and pay up front. Other than the signature large fried chicken, they also have a variety of Taiwanese snacks and bubble tea.

n by SophiaHo on 500px.com

Large Fried Chicken – Seaweed Powder

Of course we had to try the Large Fried Chicken which costs $9.99 for one piece. It’s quite expensive compared to Taiwan where it’s only around $3. Here, you are able to season the chicken with a variety of flavours though and can choose up to two flavours for free. The chicken itself is huge (the size of your face), but the chicken remains moist and juicy inside with the outside being extremely crispy. We chose to have one with salt and pepper which is essentially the original flavour. The other, we chose to have seaweed powder which was my favourite. Although quite expensive, I would still come back for it and share it as a snack.

n by SophiaHo on 500px.com

Crispy Oyster Mushrooms

In Taiwan, we were also obsessed with the Crispy Oyster Mushrooms. Here, these were just as good with the oysters remaining moist and the outside well seasoned and crispy. They were priced at $5.75 but you got a decent portion.

n by SophiaHo on 500px.com

Big G Milk Tea

Last but not least, we got the Big G Milk Tea for $4.50 and added $0.50 for pearls. By buying one main, one snack, and one drink, we made this a combo and received $1.50 off our total combo. The milk tea is okay, but nothing super special, so I find it quite expensive.

Overall, we are happy that we now have the large fried chicken available in Richmond. It makes a great snack when you are craving something deep fried and the best part is they open late!

Pros:
– Chicken is moist and batter is crispy
– Open late

Cons:
– Not exactly cheap for fried chicken

Price Range: $10-20

1: Terrible 2: Poor 3: Average 4: Good 5: Excellent

Food: 4 Service: 3 Ambiance: 2.5 Parking: 3 Overall: 3.5

They are then enrobed in a bean-to-bar dark chocolate and topped with a beautiful almond paste disc with a rooster head design.

Overall, Wild Sweets has a great selection of gifts if you’re looking for something a little different this lunar new year. The sweets are a work of art with many items decorated or painted by hand. Plus, the beautiful red packaging makes it perfect for the occasion.

The Deluxe Chinese Restaurant

o by SophiaHo on 500px.com

The Deluxe Chinese Restaurant opened up a few months ago in Richmond. It is located next to Yuan’s Shanghai Serendipity.

o by SophiaHo on 500px.com

The restaurant offers dim sum in the early mornings and lunch and switches to Cantonese cuisine for dinner service. What is more interesting is that they serve sushi and sashimi during dim sum service. Yes…that is a sushi bar behind the counter. Honestly, that made me question the food even more because who comes to a dim sum restaurant for sushi?

o by SophiaHo on 500px.com

The decor inside is definitely pretty nice, on par with the Yuan’s next door. They also have private rooms if you are hosting parties.

o by SophiaHo on 500px.com

Tea came in a fancy teapot along with a heater. However, because of all these appliances, we found it took up way too much space on the table.

o by SophiaHo on 500px.com

Shrimp Dumplings

We started off with the Shrimp Dumplings which were quite typical. Large shrimps inside but nothing out of the ordinary.

o by SophiaHo on 500px.com

Beef Rice Roll

The Beef Rice Roll came accompanied with two gai lans. The rice roll itself was quite thin and smooth.

o by SophiaHo on 500px.com

Sticky Rice in Lotus Leaf

The Sticky Rice in Lotus Leaf was a decent size with a variety of ingredients including minced pork, dried shrimp and egg yolk.

o by SophiaHo on 500px.com

Steamed Custard Bun

Next up were the Steamed Custard Buns. Not super pretty in appearance with the odd bumps here and there, but there was a good amount of filling and the bun itself was light and fluffy.

o by SophiaHo on 500px.com

Pork Shiu Mai

They offer truffle shiu mai here as well, but we opted for the regular Pork Shiu Mai as my mom doesn’t like the taste of truffle. These were quite large and the wrapper was thin.

o by SophiaHo on 500px.com

Taro Mushroom Bun

An interesting dish was the Taro Mushroom Bun. The bun itself is actually filled with taro and the outside is decorated with cocoa powder to imitate a mushroom.

o by SophiaHo on 500px.com

Is this cute or what? Even has the stem! The bun itself is nothing special but the appearance definitely won us over.

o by SophiaHo on 500px.com

Steamed Malaysian Sponge Cake

To finish our meal, we had the Steamed Malaysian Sponge Cake. This was a big portion but I found it to be a little too dense for my liking.

o by SophiaHo on 500px.com

Overall, we found The Deluxe Chinese Restaurant to be quite average for the price we were paying. The price is slightly higher than average, but the food was nothing too special. We also found the selection of food to be quite limited unless you want to venture into trying their sushi (which is quite expensive by the way). Not sure if I would return given the many options there are in Richmond.

Pros:
– Luxury ambiance
– Decent eats

Cons:
– Limited selection
– On the pricier side for the quality of food

Price Range: $15-20

1: Terrible 2: Poor 3: Average 4: Good 5: Excellent

Milk & Eggs

o by SophiaHo on 500px.com

Milk & Eggs is one of the newest spots in Richmond, located in the plaza on Odlin and Cambie. They started off with only dessert, but looks like they have expanded their menu for dinner. I decided to check it out with J on a weekday for dinner, but was surprised to find we were the only patrons dining. Seems like not many people know about the place. However, later in the night, it did pick up but most people only came here for the desserts and not dinner.

o by SophiaHo on 500px.com

Garlic Butter Fries

We started off with the Garlic Butter Fries which came with a side of home made ketchup and aioli. The flavour was on point, but I have no idea why the fries were so short. It made it very annoying to eat and it felt like we were given the scraps. If they could fix this, then they would be perfect.

o by SophiaHo on 500px.com

Mussels in White Wine Cream Sauce

We ordered the Mussels in White Wine Cream Sauce but got it in the appetizer size, which was great for sharing. Sadly, we found these to be just average. Nothing wrong with them, but the sauce was not as good as many other restaurants we have tried. For the price, I would much rather go to Rodneys.

o by SophiaHo on 500px.com

Shitake Mushroom stuffed Meatballs on Fettuccine

What we enjoyed the most for dinner was the Shitake Mushroom stuffed Meatballs on Fettuccine. The flavours for the pasta was spot on and we loved the cheese on top. The meatballs were stuffed with shitake mushroom and were huge and crispy on the outside. Really tasty, but the portions are quite small for $15. For a cafe style restaurant in Richmond, the prices are hard to compete even if the quality is there since there are so many options for diners.

o by SophiaHo on 500px.com

Ice Cream Party Bowl

We decided to go all out for dessert even though we were super full and got the Ice Cream Party Bowl. It’s recommended for a maximum of 4 people, but J is a huge dessert guy, so I was counting on him to finish this. Milk & Eggs is known for their homemade ice cream with many Asian flavours, such as durian and thai iced tea. We got M.E. Vanilla, Black Sesame, Thai Iced Tea, and Earl Grey. The flavours were all really strong and we especially liked the Thai Iced Tea. However, they can work on the consistency of the ice cream as it’s not creamy enough. As for all the decorations for the party bowl, I honestly didn’t really like it as they were too sweet with fruits and oreo cookies. Therefore, next time, I would just stick to the individual scoops of ice cream and skip the fancy party bowl.

Overall, service was friendly and attentive. Ambiance is dimly lit and very cozy for a restaurants in Richmond. However, I don’t know if I can justify coming back for dinner with some of the prices and portions you get. It’s hard to compete with chain restaurants and I feel like the clientele in Richmond just won’t pay these prices. However, I am excited about their ice creams as we really don’t have any homemade ice cream shops like Earnest Ice Cream in Richmond. Plus, they open late so it’s a great place to go for a date or hang out with friends.

Pros:
– Ice cream flavours are very strong
– Open late

Cons:
– Dishes for dinner are slightly on the pricey side

Price Range: $20-30

Wild Sweets: 2016 Holiday Collection

NOTE: All food and beverages were complimentary, but all opinions are based on my own experience.

Still looking for last minute holiday gifts? With the launch of the 2016 holiday collection, Wild Sweets has you covered whether you’re looking for the perfect cake to bring to your holiday parties or if you’re looking for a box of chocolates for a gift.

Snapseed by SophiaHo on 500px.com

Venezuela Ocumare Chocolate ‘Bûche de Noël’

A beautiful and elegant cake that will be a showstopper at your parties, this chocolate brownie cake has a variety of textures. The cake features crispy crêpes hazelnut praliné, dark chocolate & vanilla bean ganache, dark chocolate Crème Brûlée cream, dark chocolate sabayon mousse and dark chocolate gelée.

Snapseed by SophiaHo on 500px.com

Crispy Chocolate Cherry Orange ‘Tea Cake

One of the most surprising cakes for most of us was this one. They based the cake with the ingredients in a traditional fruit cake but completely modernized it. Usually, I hate fruit cakes because of how dense it is, but this had so many layers, creating a lovely texture.

IMG by SophiaHo on 500px.com

The cake is laced with dried cherries, cranberries, and orange peels which have been soaked in brandy. The cake is then placed over a crunchy buttery ‘sablé’ cookie topped with a hazelnut chocolate praline cream with crispy crepe flakes, and finished with a dark chocolate coating. I highly recommend giving this a try.

IMG by SophiaHo on 500px.com

Crispy Cherry Ganache Collection

This has a similar cake component to the Tea Cake, but is placed on top of hazelnut chocolate praline cream with crispy crepe cookies. A soft ganache made with different fruit-based liquid caramels is poured over the crispy praline / cake components. Each collection features an assortment of 4 chocolate bouchées with the following flavours,

  • William Pear & Chestnut Cream Caramel Ganache
  • Lychee Rose & Raspberry Caramel Ganache
  • Cassis Blackberry & Elderberry Ganache
  • Mandarin & Orange Zest Caramel Ganache

These reminded me of moon cakes but a chocolate cake version.

IMG by SophiaHo on 500px.com

Cocoa Bean Chocolate Tea

I believe when you make a purchase for both the Tea Cake and the Crispy Cherry Ganache Collection, you will receive a pack of the Cocoa Bean Chocolate Tea. I was confused when they told us we were trying chocolate tea. Did they mean they were going to melt chocolate in tea? But how come it looked literally just like tea? Well, the secret is the tea is made entirely from roasted cocoa beans and husks only. There is no sugar other than vanilla bean powder added. Seriously very tasty and something everyone should try!

Santa-Sphere, Orna-Tree

Making great gifts, Wild Sweets also has Holiday cocoArt Sculptures for sale. These are made with milk and/or dark chocolate. And if you know the story of Wild Sweets, all their chocolates are made in-house from origin cocoa bean-to-bar chocolate.

2016 Vintage Canadian Icewine Collection

Moving on to boxed chocolates, this box is perfect for those who enjoy ice wine. The box features an assortment of 12 chocolates, each comprising of 2 types of fillings: one is a honey nut and Canadian Icewine praline cream while the other is a soft ganache made with different Icewine and fruits purees associated with the specific tasting notes of 4 different types of Vintage Canadian Icewine with some as old as 1999. I’m a fan of ice wine, but I found that the ice wine flavour was too light and I could barely taste it.

The collection includes the following ganache flavours:

  • Cabernet Franc Icewine & Strawberry Apple Ganache
  • Riesling Icewine & Peach Orange Ganache
  • Vidal Icewine & Pineapple Passion fruit Ganache
  • Gewürztraminer Icewine & Lychee Rose Ganache

IMG by SophiaHo on 500px.com

2016 Vintage ‘Ganache Classique Nougatine’

This box features an assortment of four different types of chocolate made from Single Origin cocoa beans. Each ganache filling is topped with a piece of salted butter cocoa nibs nougatine before being enrobed in dark chocolate. Therefore, I loved the slight crunch and chew this collection had. This was probably my favourite of the chocolates.

The collections includes the following origins and percentages:

  • 70% Venezuela Ocumare
  • 70% Venezuela Canaobo
  • 70% PeruOro Verde
  • 64% MexicoChiapas

pRaliNe & caRaMel Collection N°12

I really liked the visual aspect of this box. The ‘Enrobed’ version features a soft and creamy ganache flavoured a fruit juice caramel, and coated in dark chocolate. The ‘Moulded’ chocolate is hand-painted with cocoa butter colours and filled with a rich and smooth hazelnut butter & milk chocolate cream laced with crispy French ‘crêpes’ cookies.I really enjoyed the orange flavours paired with the chocolate.

The collection features the following assortment of flavours:

  • Hazelnut & vanilla bean praline cream
  • Raspberry caramel & vanilla bean ganache
  • Hazelnut & orange zest praline cream
  • Fresh orange juice and zest caramel ganache

cocoArt ‘Praliné Noisette’ Collection N°17

This box features sweetened hazelnut butter or praliné in various forms and with distinct textures. The collection includes 2 types of chocolates: crispy or creamy praliné. With the glitter and beauitfully painted art, this box is sure to impress.

The collection features the following assortment of flavours including:

  3. Crispy – Lemon Zest Oil Praliné
  4. Crispy – Anise Seeds & Oil Praliné
  5. Creamy – Apricot Passion Ganache

  9. Creamy – Double Vanilla Bean Ganache
  10. Creamy – Origin Espresso Coffee Ganache
  11. Creamy – Raspberry Lemon Zest Ganache
  12. Creamy – Black Currant (Cassis) Ganache

cocoArt ‘Honey Heart’ Collection N°20

Each chocolate within the ‘Honey Heart’ Collection features 2 types of fillings: one is a smooth lightly scented honey-nut cream while the other is a soft ganache made with different fruit and berry juices. Super pretty and perfect for a loved one.

  • Cassis – Blackberry Fruit Ganache & Elderberry Honey-nut Cream
  • Mango – Apricot Fruit Ganache & Saffron Honey-nut Cream
  • Lychee – Raspberry Fruit Ganache & Rose Honey-nut Cream
  • Strawberry –  Pineapple Fruit Ganache & Orange Blossom Honey-nut cream

Overall, I was very impressed with the new holiday collection, and especially with the cakes. The cakes are also priced very well at around $20-25 each. Make sure to pre-order online in advance to guarantee your cake.

Morals Village

commercial photography locations

NOTE: All food and beverages were complimentary, but all opinions are based on my own personal experience.

Thanks to the team behind Chopstick Fest, I was invited to a tasting at Morals Village, as they will be a participating restaurant during the festival that will run from October 15 – 30, 2016. Morals Village is a chain restaurant popular in China, but has expanded to Canada with a location in Toronto, and now Richmond.

commercial photography locations

Whereas the Toronto location has all-you-can-eat, the Richmond location is only a la carte right now. For $2.85, you can make your own sauce.

commercial photography locations

Special Spicy Style and Mixed Mushroom Soup

Since we had a large group, we tried almost all their soup bases. They have different soup bases ranging from very spicy to a healthy and non-spicy soup base.

commercial photography locations

Pork Rib Soup and Black-Bone Chicken Soup

The pot in front of me was the Pork Rib Soup and Black-Bone Chicken Soup, so I ate mostly from this one. Both of these soup bases were filled with goji berries, a superfood, which is good for your health. The soup itself was cloudy and flavourful. But to be honest, with the sauces you dip your food in after, it’s hard to taste the true flavours of the soup base.

commercial photography locations

Beauty in the Golden House

One of their most expensive soup bases is the Beauty in the Golden House which must be ordered in advance and is limited. This beauty is priced at $68 so definitely not cheap. However, it’s filled with a whole chicken, winter melon, goji berries and abalone. It depicts the winter melon soup that you often find at Cantonese restaurants. The soup was absolutely delicious with a mix of seafood and chicken flavour.

commercial photography locations

Standard Joshu Wagyu Kobe Beef

Onto what I’m always excited about at hot pot – the meat! Well onto the luxury style of hot pot here at Morals Village, we were presented with the Standard Joshu Wagyu Kobe Beef. This sells for a hefty $58 for around 5 slices! Yes…very expensive, but man, this stuff melted in my mouth! Be sure to hold onto your meat and just dip it in the broth until it turns light brown and quickly take it out or you will overcook it!

commercial photography locations

Angus AAA Short Rib

Onto another favourite which was the Angus AAA Short Rib. The cut was just the right thickness and again this melted in your mouth. I highly recommend getting this as it won’t cost as much as the wagyu. This one goes for around $23. Still quite expensive for the number of slices you get, but its quality over quantity here.

commercial photography locations

Deluxe Lamb Roll

The Deluxe Lamb Roll is perfect for all you lamb lovers out there. Because of the marbling, the lamb was absolutely tender and juicy and it did not have a strong gamey flavour. Love how thin they cut the lamb as well.

commercial photography locations

Ox Tongue

Some may find this odd, but Ox Tongue is actually very popular in Chinese culture. The ox tongue is cut thinly and after cooking, it has a nice chew.

commercial photography locations

Pork Belly

Last but not least, we tried the Pork Belly which had tons of fat, but after cooking, the fat melted in your mouth.

commercial photography locations

Cheese Beef Ball, Fish Ball, Pork Ball, Prawn Ball

Morals Village has a variety of balls, which appear to be made in house because they are still fresh in a paste form. We were able to try the Cheese Beef Ball, Fish Ball, Pork Ball, Prawn Ball, with the seafood ones being my favourite. They were very bouncy and fresh.

commercial photography locations

Deluxe Seafood Platter

As if our meal wasn’t luxurious enough, we were presented the Deluxe Seafood Platter which goes for $108! The platter features abalone, BC crab, prawn, oyster, grouper, with the seafood being extremely fresh. So fresh, that the spot prawns were live! Yes – I skipped a beat when I realized I was cooking the prawn live… I usually cook prawns, fish and crab in my hot pot as well, but abalone was a first for sure.

commercial photography locations

Quail Eggs

Next, we got to try some Quail Eggs, also an ingredient that I’ve never put in the hot pot. I actually really enjoyed these in the hot pot as you could soak in the broth.

commercial photography locations

Shrimp Paste on Chinese Donut

A pretty random item was the Shrimp Paste on Chinese Donut. Yes – we threw a Chinese donut into the hot pot! I usually eat this with congee, but not at Morals Village. Since the shrimp paste is raw, we had to throw it in to cook, but the tobiko fell off and got lost in the soup. Not bad though as the Chinese donut is great at soaking up all the tasty broth.

commercial photography locations

Bean Curd Roll

Of course there is your typical hot pot ingredients including all the much needed veggies. The Bean Curd Roll was a bit more special since it was your typical bean curd but deep fried and rolled up. However, when boiled, it wasn’t anything special.

commercial photography locations

Gold and Silver Bread

They also have some cooked food including the Gold and Silver Bread with condensed milk. Everyone loves this Shanghai baked good.

commercial photography locations

Handmade Noodles

If you’re still hungry, then carbs are the way to go! They feature Handmade Noodles which we cooked to al dente. I really liked these!

commercial photography locations

Last but not least, remember the Beauty in the Golden House soup base? Well, they took out all the overcooked food sitting at the bottom and the chefs added in rice and tons of garlic. What resulted was a delicious rice in broth, sort of like a congee. This was filled with flavour from all the cooked meats and seafood we had thrown in and the garlic really gave it added flavour.

commercial photography locations

Overall, I really enjoyed the meal at Morals Village, but many of their top items will leave your wallet empty. However, it is worth a try for a special occasion, and you can of course go for their less pricey items. Private rooms are also available, perfect if you need to entertain your guests.
